I’m making the new year a better year thanks in part to my friend Nicola over at G-Free Mom Blog with her fabulous Detox January schedule! Each day features a guest blogger and healthy recipe and here’s mine!
I’ll confess. Even after going through a breast cancer diagnosis at the age of 37, I’m still guilty of sneaking the occasional bad foods like boxed Mac & Cheese or Pringles chips. In order to counterbalance these snafus, I do my best to improve my daily habits and I’ve been achieving this through homemade smoothies and soups!
My recently purchased industrial strength Vitamix blender has changed my life! It’s so rewarding to select healthy organic whole foods, drop them in skin and all and blend them knowing that it is what it is; wholesome, quality, nutritional.
My newest quest has been to make my own soups, and the process could not be easier! Ok, second confession… I don’t have much interest in cooking (Remember, I’m “the cardigan” and Kristin is “the cook”). Actually, I’m quite lazy when it comes to that task. If this sounds like you, or perhaps you’re not lazy but very busy, I have a wonderful tip: Grab 2-4 of the recipes (Vitamix Recipes) that sound good to you, make one trip to the store, make each soup one after another, label and freeze. I recently did this and I was so proud of my accomplishment! I made 3 very healthy and yummy soups in an hour and now have them stashed and ready for a rainy day. I didn’t even have to rinse the blender in between! Who cares if a little Carrot Soup gets mixed in with my Creamed Spinach!?

Recipe note: 1) You can also hand chop the carrots, ginger and garlic. 2) Since I was freezing the soups I only blended for about 25 seconds.
